Panna cotta is the perfect summer dessert, served chilled being light and flavourful. Make it your own by thrifting a few vintage dessert cups and fresh lavender sprigs from the garden.

Servings: 6

Prep time: 40 minutes

Chill time: 1 hour

  • 60 ml cold water
  • 7 g powdered gelatin
  • 500 ml heavy cream
  • 50 g granulated sugar
  • 50 g brown sugar
  • 2 - 3 tsp The BLC Tea blend

Mix the powdered gelatine with the cold water and let stand for 10 minutes until the powder soaks up the liquid.

In a small saucepan, combine the heavy cream and the sugars, whisk to combine (do not whisk to create bubbles, only to stir). Heat the mixture over medium heat and cook until it is just boiling. Add the tea and stir in. Remove the pan from the heat and allow to steep for 15 - 20 minutes.

Add the soaked gelatine and cold water (it will have become a solid gel) to the cream and mix until melted.

Let the mixture cool for about 20 minutes. Once cooled, pour the mixture through a sieve into a measuring cup.

Pour the mixture evenly into ramekins / dessert cups.

Place the cups in the refrigerator and let them chill for at least an hour.
