Stuffed Date Recipe: Pick Me Up Infused Chocolate Coating

As we cultivate the relationship we have with ourselves by giving self-love to our physical, emotional and mental needs it inspired us to create a sweet yet nourishing treat that will give you a little 'pick me up' throughout your day!

These tahini stuffed dates are dipped in a velvety Pick Me Up Tea infused chocolate sauce, the perfect balance between earthy green tea blend, raw cacao and sweet honey. Don't worry there is plenty of chocolate sauce left over for you to get creative with! A few of our favourites are dipping frozen avocado wedges and banana slices, even the occasional edible flower if we’re feeling fancy during our big evenings in!

This is a two-part recipe, starting things off with: 

Part 1 - Pick Me Up Chocolate Sauce

Ingredients

  • 1/4 cup Coconut Oil
  • 1 tbsp Pick Me Up Tea
  • 2-4 Tablespoons Raw Honey (depending on how sweet you want it)
  • 1/4 cup Raw Cacao 
  • Pinch of Sea Salt

 

Directions

In a small saucepan heat the coconut oil on medium-low temperature until fully melted. Once melted, turn off the heat and add the Pick Me Up tea to infuse the warm oil for 5-7 minutes. Next, add the raw cacao powder, desired amount of honey and pinch of salt. Stir the sauce until well combined and transfer it to a bowl to cool. You can speed up the cooling process by placing the chocolate sauce in the freezer for 5-6 minutes. 

 

Part 2 - Stuffed Date Recipe

Ingredients

  • 12 Pitted Dates (we use organic deglet noor dates)
  • 2-3 tbsp of Tahini
  • 2-3 tbsp of Pick Me Up Chocolate Sauce
  • Pinch of Flaky Sea Salt
  • 12 Goji Berries

 

Directions

Using pitted dates, find the natural slice down the centre of the date and open it up. Fill the center of the dates with tahini and place them in the fridge to set 10-15 minutes. This makes them easier to dip and for the chocolate sauce to evenly coat. When the dates are firm and cold, dip each one in the Pick Me Up chocolate sauce and place them directly on wax paper. Once the Pick Me Up chocolate sauce hits the cold date it will firm up almost immediately. Working with a few at a time, top each date with a sprinkle of flaky sea salt and a goji berry. 

 

These will last up to a week stored in the fridge, but believe us they won’t last that long! Pair with your favourite cup of Woash tea to nourish and excite the taste buds.
